Jumping in on under1000 blog. I only read it here and there but what the hell is lacto fermenting food. I thought hummus and peas and licking the ground at Splash Pad were bad enough.

I know lots of kids do it, but it's always odd to me when kids eat weird crap, anyway. What about a can of brake fluid would make a kid think, "huh. Now, *that looks like something I'd like!"?

Chicken enchiladas are easy, and they freeze great for a fast meal some other time, too. I was going to make Megan's mexican lasagna but I don't have everything for that on hand.

I need to start cooking - LM really likes *real food - go figure..lol.

I need to figure out some easy chicken and beef recipes. I do make spaghetti. I might do a roast or something in the crock b/c its cold here again.

I'm just always afraid I am going to undercook my chicken.

Kristin, I would totally invite you. Why wouldn't we? Chicken enchiladas sound so good but I'm still recovering from a can of enchilada sauce I added to a chimichanga casserole I made day before yesterday. I'll let that subject stop there *grins* but temind me to not eat that stuff anymore. I think tonight might be smothered chicken fried pork steaks with noodles and Brussels spouts.

Kristin, if you crockpot chicken it'll definitely be done. You have to buy the little stand thingie, but it's cheap, for making "beer butt chicken" lol, and it is always *really good. What about chicken tacos? Would he like that? Boil the chicken breast and then shred it and season it?

I worry about chicken, too. I like roasting whole chickens, though...you can let them get super-done and they still seem to stay moist. They're cheap, too. Kristin, on those, if you can pull a leg bone off with ease, it's done. I usually go 1.5 hours on 350 with a roughly 3.5-4 pond chicken. Huh, I've got one in the fridge...maybe I'll make that tonight and try my key lime seasoning on it.

Hey - AP - how close are you to Englewood? My grandfather and his girlfriend go down there during the winter. Just wondering.

I will have to start experimenting. I don't know about tacos, I've tried quesadillas and he doesn't seem really into them.

A turkey breast works really well in the crockpot, too. Just rub all over with whatever spices yank your chain, and throw it in there and let it cook all day. No additional liquid. And it's also really good if you lay pieces of bacon over it to cook, too.

I had to Google Englewood, I'd never heard of it. It looks to be maybe 150 miles from me. And I don't want anyone eating with me every night, but we could just have you rotate around. ;-)

If you do a whole chicken, you'll have enough left over for another meal or two. If Mexican isn't going to fly, you can make shredded BBQ chicken sandwiches, chicken soup or pot pies and a multitude of casseroles with the rest. Or, just put it in a good salad.

Well, *that didn't work out as planned. Damn thing smoked back into the house and now I had to open doors and windows and run the fan to get the smoke out, so now it's *really cold in here. Frick.

The headache is still here. My sinuses feel like they could pop out of my face. There's no visible ... er, sign of infection, so I'm thinking they're just really pissed off. A house full of smoke probably isn't going to help, either!

The chicken enchiladas are off the menu. I forgot that Grayce had requested fried deli chicken and mashed potatoes and corn. Yuk. That's not sounding too exciting to me.

I *totally know what you mean. I woke up this morning, opened the window and when I realized how cold it was outside, I just wanted to go back to bed. Alas, my philosophy class wasn't canceled. I almost froze to death (*slight exaggeration)!

I think I am going to go to the gym today. I had all my shit to go yesterday and made the executive decision not to, but since I have not been doing the shred...and they keep bringing freakin' donuts to work...I really NEED to!

Kristin - go to the gym! We were supposed to go this morning, but due to feeling like dook, and due to my lack of interest at 5:00 a.m., I opted out and Kelly followed my bad example. Not to mention the fact that I can barely use my arms enough to make my drinks at night (heh) from *last Sunday's gym trip. :-) We're going tomorrow, hell or high water. I like the Shred well enough, but it doesn't really feel like I'm *doing anything overall, like the gym does.

Hey guys, reading a lot. I'm trying to catch up, tomorrow a big day. Suppose to have the results to a number of tests, but I spent most of the day in the cuddle zones with my smalls (yes, I call my children smalls). They're having so much fun at preschool/pre-k. And seriously? Allloonnee ttimme. Is great. I'm sore, and sad. If I started to complain about why, you'd all laugh because I'm a major nerd (Didn't you all know I'm a gamer nerd?) Anyways. Hiii everyone, I'm reading.

You guys make me giggle.. I just feel so overwhelmed.. I may have to print these out and go over them. And take notes.
